Basic Curry

Chilliz Chicken Curry Mix - but will work with any curry mix
800gm Chicken (or other meat according to the curry paste)
1 large onion
440ml Coconut milk
Vegetable, as available
Carrot
Peas
Potato
Broccoli
Red pepper
Chop the chook.
Chop the veg.
Small pieces are good.
Stirfry the chook in small batches until it's sealed - remove all chook from pan. Between batches remove excess water from pan.
Stirfry the onion until it just starts to soften.
Add the curry paste and stirfry for 30 to 60 seconds, no more - until it just becomes aromatic.
Add the coconut milk and about 200ml of water (half a can).
Return the chook, and juices, to the pan.
Mix it all up thoroughly.
Bring to the boil then simmer on a *very* low heat for 20 minutes (30m or more for beef)
Add the previously chopped vegetables and mix well.
Bring to the boil, again, then simmer on a *very* low heat for another 30 minutes.
During the simmer periods be sure to stir well every 10 minutes.
Serve with rice.

If doing a One-Pot meal and using potatoes instead of rice:
Add the potatoes with the other vegetables at the 30 minute mark.
